Playdough Recipe Help

I made some today and forgot the c of tartar also. I have found that the cooked kind lasts the longest. I have had it last for 9 months!
I just made it like I always do, but left out the c of t.
What does the c of t do any way?

it acts as a preservative, I believe- it helps inhibit growth of micro organisms.

it helps to prevent the growth of spores- as far as I know.

I've always known cream of tartar to be a smoothing agent and something that helps the ingredients stick together.
Without it the dough is crumbly.
My dad always used it in gravy too.

I made chocolate playdoh today without the tartar and it came out soft and nice...just like when I put in C of T. I always thought it helped preserve the dough too.
We will see how long it lasts.
