I have often worked informally, with minimal paperwork whenever I can, but you most definitely will want the ability to get medical care for the kids in an emergency, so they will need to sign that. It probably wouldn't hurt to type up what you guys talked about as far as costs, times, or whatever is important to you and sign the copies for both of you to have. Just in case there is an issue.
